Banana Bread Made-Over {paleo, refined sugar & gluten free}

  • 1 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3 ripe bananas
  • 3 eggs
  • 1/2 cup coconut palm sugar
  • 1/4 cup melted coconut oil
  • 2 tsp vanilla
  • 2 tsp maple extract

When my dear friend, Michelle, asked me if I could “healthify” her MeMe’s recipe I must admit, I had a bit of trepidation. Not because I didn’t think my makeover wouldn’t turn out,  I was concerned that the ingredient list would be so far from the original and it might upset banana bread fans all over the world {wink wink}.

The beloved Banana Bread has been an all time keepsake recipe for many of our families and this deliciously moist bread is now part of my archives and I hope yours too!  The original recipe had 1 cup of traditional white sugar and  1 1/2 cups of white flour {yikes too much white stuff}.  The only 2 ingredients the new makeover shares are bananas and eggs but do not fret it is sweet and actually healthier for you with the exchanges of flour I made!



I was surprised MeMe’s recipe didn’t use vanilla extract. I did a little research and found that since she was born at the turn of the century and lived in Middlesex, PA; it is quite possible vanilla was not available to her because it was originally from Mexico and only grew in tropical climates.  Not to mention, “REAL” vanilla was {still is} one of the most expensive food items per-ounce in the world due to its laborious hand-pollination and hand-harvesting process.

It is worthy to take note that there are vanilla imposters on the shelf so buyer beware of purchasing artificial vanilla. It is often made with vanillin that is extracted from coal tar or wood pulp as a by-product of paper production or animal excretions like cow dung {you read it right folks}!

It is admirable that I mention Michelle’s sweet MeMe was 100 years old when she died!  My very own grandmother will be 100 next year too, bless her spry self!  I was honored to makeover this keepsake recipe and I sure hope MeMe is smiling down on us for taking on such a feat.  These days we have to eat cleaner because our grandmothers had a different era of food supply than ours today.

Serves: 8-10
  • 1½ cups almond flour
  • ½ cup coconut flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3 small ripe bananas
  • 3 eggs
  • ½ cup coconut palm sugar
  • ¼ cup melted coconut oil
  • 2 tsp vanilla
  • 2 tsp maple extract
  • next 3 optional:
  • ¼ cup chopped walnuts
  • few pieces sliced banana
  • sprinkle coconut sugar
  1. In a bowl or mixer cream the bananas, sugar, oil, extracts and eggs.
  2. Sift the flours, baking powder and baking soda.
  3. Add the liquid to the flour and blend until it is creamy.
  4. If you choose to add walnuts, sliced banana & sugar on top, cover the last 20 min. with foil.
  5. Pour into a lightly greased loaf pan and bake for 45-50 min. at 350.
  6. Let it cool before cutting.
I love using the tooth pick test; if it comes out clean you know it is done. I have baked it up to 55 min. covered with foil if you don't like a moist texture. If your bananas are large only use 2. The batter will be thick when pouring it into the loaf pan. Please use organic when you can.

    Hello Dawn!

    Jassy and I made this banana bread last weekend and it was just perfect!! Absolutely delicious! She loved having it with her breakfast each morning:) I had another grain free “go-to” banana bread recipe, but this has now replaced it! yay!

    Next time I may try to scale back the coconut sugar even more since ripe bananas are so sweet and just see if i can cut back on sugar even more 🙂

      Hi Kristen! I am so thrilled you all enjoyed it!! But what I am most excited about is you both made it together and that you are teaching Jassy about real wholesome foods! I am honored to be your go to Banana Bread Recipe! I love that you want to lesson the sugar. I personally would also lower the sugar but it was a makeover recipe for a friend and I didn’t have the heart to change her keepsake family recipe any more than I did.

        Definitely!! She loves cooking and baking with me. :). And has learned all the ways we eat clean but still have fun treats . It is so very important. Keep them coming!!
