Beet-iful Juice

Serves: 1-2
  • 1½ cups water
  • ½ cup ice cubes (4-5)
  • ¼ chunk of a raw beet
  • 1 celery stalk
  • 1 whole mango (or 1 cup fresh pineapple)
  1. Wash celery, beet and peel off any brown areas.
  2. Wash and cut mango flesh away from the seed on both sides.
  3. Cut a cross-hatch pattern through each half of the mango.
  4. Careful not to cut through the skin all the way.
  5. Push upward and underneath the mango to pop the sliced squares out so you can slice the diced flesh easily.
  6. Add all ingredients into the Vitamix and blend.
The fresh mango or pineapple will help balance the strong beet flavor. You can always add more fruit if the beets overrule the flavor. I find that frozen fruit is not as sweet as the fresh. You certainly could use frozen, but you may need to add stevia or another natural sweetener. This will make two good size portions so share the love! You can save it for later, however, fresh juices are best enjoyed on the spot for maximum benefits.
