Although we omitted dates the stevia will sweeten nicely.
Adding a few tbsp. water can help to bind crust in place.
FILLING
2 c. soaked raw cashews
½ c. lime juice (about 4 limes)
¼ c. coconut oil
¼ c. coconut nectar
¼ c. water
*FreeDiet omit: coconut nectar
Use ⅛ tsp. stevia (mix in the ¼ c. water)
taste and add few more dashes
Instructions
To make the CRUST, pulse in a food processor almonds, flax, oil, extract and pitted dates.
You can pulse longer for a finer crust texture or keep it crunchy.
Press crust mixture in a small glass dish. If you use a large dish filling will be too thin,
To make the FILLING, In your food processor, blend cashews, lime juice, oil and nectar.
Slowly add water to get a creamy texture. Spread the cashew mixture over the almond crust. Cover and put in freezer until chilled ½ hour if you can wait that long.
These bars will keep for weeks in the freezer. All I have to say is they are RAWALICIOUS!
Notes
If you are not familiar with coconut nectar you can use maple syrup or ⅛ tsp of stevia in the filling. You can make your own almond flour for the crust by grinding the raw nuts in a strong blender like the Vita mix. For a sweeter crust use 12 pitted dates. If coconut oil is solid you can gently warm the jar up under hot water or in a pan (low heat). Soaking nuts is a great way to wash debris and yeast off. For more information "how to" soak nuts click link in post. Cashews are a soft nut so even if you only have time to soak them for an hour that is helpful. If you are soaking harder nuts like almonds and walnuts overnight is best. At the very least please give nuts a good rinse and pat them dry. I have also baked just the crust for 15 min. at 350 degrees and let it cool then follow with recipes creamy filling. We consider these a great option for a candida free diet as well if you follow the FreeDiet directions.
