Brazil Nut Milk {dairy & refined sugar free}

  • 2 cups soaked Brazil nuts
  • 3½ cups cold water
  • 1 tbsp coconut oil
  • 1 tsp maple extract
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • ⅛ tsp cinnamon
  • ⅛ tsp nutmeg
  • few dashes stevia
  • 1 tbsp maple syrup {optional}
  1. In a Vitamix or strong blender add water and nuts.
  2. Add extracts, oil, spices and maple syrup if you decide to use it.
  3. Blend till creamy.
  4. Using a fine sifter, pour milk and pulp through sifter into a wide mouthed container.
  5. Separate the nut pulp from the milk by using a spoon. Pressing the pulp will help.
  6. Refrigerate the milk for at least a ½ hour. It is amazing cold!
Read my post on directions and why soaking nuts is best. You can use unsoaked nuts but it is best if you soak them in a glass jar with filtered water over night. I couldn't wait to drink the milk so I added a few ice cubes and went to heaven! The milk will separate from some of the solids after leaving it in the refrigerator. You can stir it or drink the thinned out milk too. I can't decide which I fancy more! Oh and I added cacao powder to another batch and viola I had chocolate milk!!
