Coffee Maple Muffins {paleo, grain, dairy, nut & refined sugar free}

Ingredients
  • ½ cup coconut flour
  • ½ cup tapioca flour
  • ½ cup ground flax
  • 2 tbs chia seeds
  • 1 tbs goji powder {optional}
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 3 eggs
  • ¼ cup maple syrup
  • ¾ cup strong brewed coffee
  • 2 tbs coconut oil
  • 1 tsp coffee extract
  • 1 tsp maple extract
Instructions
  1. Preheat oven to 350. Line muffin tin with unbleached cups.
  2. Mix coconut, tapioca flour, chia seeds, baking soda & powder together.
  3. In a separate bowl mix eggs, coffee, maple syrup, coconut oil {melted} and extracts.
  4. Add the liquid to the flour mixture and blend well.
  5. Fill muffin cups ¾ full and bake for 20-25 minutes.
Notes
I have added Lily's stevia sweetened chocolate chips and only added 2 tablespoons of maple syrup and they were amazing. I also used decaf coffee and only needed to bake muffins for 20 minutes in my convection oven. Use a tooth pick if it comes clean in a regular oven than they are done. Please as always use organic ingredients when you can. I love Vital Farms eggs because their girls are pasture raised and eat grasses & flowers in the fresh air!.
