In a separate bowl mix eggs, coffee, maple syrup, coconut oil {melted} and extracts.
Add the liquid to the flour mixture and blend well.
Fill muffin cups ¾ full and bake for 20-25 minutes.
Notes
I have added Lily's stevia sweetened chocolate chips and only added 2 tablespoons of maple syrup and they were amazing. I also used decaf coffee and only needed to bake muffins for 20 minutes in my convection oven. Use a tooth pick if it comes clean in a regular oven than they are done. Please as always use organic ingredients when you can. I love Vital Farms eggs because their girls are pasture raised and eat grasses & flowers in the fresh air!.
