Rice Crispy Treats

Ingredients
  • 1½ cups brown rice cereal
  • ½ cup freeze dried raspberries
  • ½ cup coconut manna/butter
  • 1 tbsp. coconut oil
  • 3 tbsp. raw honey
  • 1 tbsp. chia seeds
  • 1 tsp vanilla or maple extract
Instructions
  1. In a food processor blend coconut butter, oil and dried raspberries till creamy.
  2. Add honey, chia seeds, and extract blending till all ingredients are mixed.
  3. In a separate bowl mix rice cereal and coconut mixture using your hands.
  4. Using an Easter egg shaped cookie cutter press mixture into cutter and lift.
  5. You can form into balls or press into a dish and cut later.
  6. Refrigerate for up to an hour.
Notes
I found an amazing "Veganic" Sprouted Brown Rice cereal that I used in this recipe! It is made by a company called One Degree Organic Foods. They use coconut palm sugar and sprouted brown rice but what is really cool is that you can read about every single ingredient in the box-down to the last grain by scanning the QR code on the cereal box! Now that is one cool company! One I want to support and buy their food! You can use any rice cereal that fancies you but make sure it doesn't have tons of added sugar and use organic if you can as conventional rice is high in pesticides.
