Strawberry Mint & Lime Dressing {raw, vinegar & gluten free}

Serves: 8-10
  • ¼ cup soaked cashews
  • 8-10 strawberries
  • 2 limes juiced
  • ¼ cup olive oil
  • 1 tbsp. honey
  • ½ tsp Himalayan sea salt
  • 12 mint leaves or so
  1. Wash strawberries, limes, and mint.
  2. Blend all ingredients into a strong blender or Vitamix except mint.
  3. When ingredients are creamy add mint and pulse just enough to see flecks of mint still.
If you don't have soaked cashews you can use raw washed. Soaked add more creaminess to the dressing. This recipe will last up to a week in the refrigerator. If your strawberries are not sweet you can always add an extra bit of raw honey. If you are following a strict candida diet you should omit the honey. Please use organics where you can.
