Carrot Ginger Sesame Dressing {dairy, vinegar & gluten free}

Ingredients
  • Juice of 2 lemons
  • Juice of 1 orange
  • ½ cup olive oil
  • 4 carrots
  • 1 small chunk ginger
  • 1 tbsp. tahini
  • 1 tbsp. miso paste
  • Himalayan sea salt
  • roasted sesame seeds
Instructions
  1. Wash the citrus, peel the ginger and carrots.
  2. In a Vita mix or strong blender add all ingredients except salt and sesame seeds.
  3. Puree ingredients until creamy.
  4. Add sea salt to taste.
  5. If the sesame seeds are raw you can toast them for a minute.
  6. Add them to your dressing or sprinkle them over your salad.
Notes
I love buying Eden Organic's Gosimao; which is sesame seeds roasted with sea salt and seaweed. You can find this in the Asian isle of your health food market. If you can only find raw sesame seeds you can roast or toast them for a few minutes. If you love the pungent flavor of ginger, add more. If your dressing is too thick you can always add up to ¼ cup of filtered water. This dressing will last for a week in the refrigerator. Please use organic when you can.
