Ingredients
  • 1 whole chicken
  • 3 medium sweet potatoes
  • 4 stalks celery
  • 4 carrots
  • 1 whole head garlic
  • 1 medium onion
  • 1 pint cherry tomatoes
  • 2 strips of Kelp or 2 tbsp
  • handful chives
  • 1 bundle parsley
  • 2 chunks ginger {2" x 2"}
  • oregano {or oregano essential oil}
  • 3 tsp pink Himalayan salt
  • ground pepper to taste
  • few dashes of garlic powder
  • Optional:
  • ghee
  • oregano essential oil
  • *omit for FreeDietâ„¢- phase 1
  • can replace sweet potato w butternut squash
Instructions
  1. In a large pot filled halfway with water add whole chicken and gently boil for 20 minutes.
  2. Make sure chicken is covered with water. Add 2 tsp of salt.
  3. Wash and cut all vegetables. Peel carrots, ginger and if potatoes are not organic peel those too.
  4. Check chicken and skim of the white foam that is the chicken fat. Turn down to low heat after 20 min.
  5. Add potato, carrots, celery, onions, ginger, garlic, oregano and tomatoes and cook for another 20 minutes.
  6. At this point you can lift the chicken out and separate meat to add back to soup.
  7. Add chopped parsley, chives, kelp, ghee and oregano oil {if using} last 10 minutes.
  8. Salt and pepper to taste and enjoy the natural healing properties of this soup!
Notes
The secret to this soup being what I claim "the world's most healing soup" is the ginger, kelp, whole head of garlic and oregano. If you do not have culinary oregano essential oil you can use dried or fresh oregano. Also, adding ghee gives this soup a buttery hint of flavor. Ghee is actually clarified butter which means the milk solids are removed and it is super good for you! I am a fan of grass-fed butter too but I will leave that up to you. If you need this to be FreeDiet approved exchange the sweet potato for other options like butternut squash, or zucchini. I highly suggest you make this soup before flu season and freeze it in small 1 serving glass jars for when the need arises. Make sure to leave a few inches from top to allow for expansion when freezing. Please use all organic ingredients in this soup when you can.
