Serves: 2
Ingredients
  • 1 cup coconut milk
  • 1 cup water
  • Juice of 1 orange
  • 1 frozen banana {or ½ cup mango or pineapple}
  • 1 carrot
  • 1 Tbsp. Organic Virgin Coconut Oil
  • 2 drops wild orange essential oil
  • or 2 drops orange extract
  • 1 tbsp. pomegranate powder {optional}
  • 4 Tbsp. Organic Pea Protein Powder
  • 1 Tbsp. Psyllium Husk Powder
  • stevia to taste
Instructions
  1. In a strong blender add all the ingredients except the pea protein, psyllium, and coconut oil.
  2. Blend well till all ingredients are creamy and smooth.
  3. Blend protein, psyllium and coconut oil on low. Otherwise I found the oil froths up if you over blend.
  4. Taste and add few dashes of stevia if you are a sweetie.
Notes
If you are not a fan of stevia you can add 2 dates and that will do the trick! If you are watching your sugar intake stick with the stevia and omit the juice of an orange too. Also, if you are using pineapple {which is a little less sugar} or mango, I find that the fresh cut works best and is sweeter. Sometimes frozen pineapple and {especially} mango tend to be flat on the sweetness. A helpful tip is to buy the fruits fresh and juicy and than cut them up and freeze them. I love adding super foods and extra nutrients to a smoothie by using Navitas Naturals products. They have goji, cacao and pomegranate to name just a few. If you are using orange extract please make sure you don't buy the flavored one. Of course using culinary essential oils brings any recipe to a whole new level! Please use organic when you can and enjoy this scrumptious smoothie!
