Creamy Chive & Garlic Dressing {paleo, refined sugar & dairy free}

Serves: 1½ cups
  • 1 cup avocado or olive oil
  • ¼ cup soaked cashews
  • handful of baby chives
  • 1 tsp Himalayan pink sea salt
  • 2 lemons juice
  • 1 tsp onion flakes
  • ¼ tsp garlic powder or
  • 2 steamed garlic cloves
  1. In ¼ cup water steam the garlic until it is soft.
  2. In a strong blender cream the oil, lemon juice and soaked cashews.
  3. Add all the other ingredients and blend until it is creamy.
  4. Taste and add extra salt if needed to your liking.
I steam the garlic because it makes it easier to digest. If you would like a thinner dressing you can add a few tablespoons of the water you steamed the garlic in. This dressing is also a great dip for baked chips or sliced vegetables. Drizzle it on fish or in your chicken salad instead of store bought mayo. The dressing will stay fresh up to a week in the refrigerator. Please use organic where you can.
