In a food processor add almond flour, nuts, ground flax, salt and coconut pulsing until fine like flour.
In a small bowl add water, honey, stevia and extracts mixing it with a small whisk until blended.
Pour wet ingredients into food processor with nut mixture and pulse until it sticks together in a ball.
If it is not sticking you can add a few tbsp. of filtered water.
Using a small or large scoop place dough on a cookie sheet lined with wax paper.
Place in the refrigerator for about ½ hour or until they are firm and enjoy!
You can freeze them as well.
Notes
I like using a small ice cream scoop for bite sized balls. Plus you get more servings this way. I use the brand Enjoy for chocolate chips as they use clean ingredients. Also, if you are not used to eating low sugar recipes, I suggest using up to ½ cup chocolate chips. If you love the maple flavor you can use up to ½ tsp. of the extract as well. Soaking the walnuts helps them to not be so bitter and reduces the natural occurring phytic acid. Fill a jar ¾ full of nuts and fill with filtered water to top. Even if you soak nuts only for a few hours {rather than overnight} it will help. Rinse the walnuts off before using. If you only have almonds and not the flour you can grind them in a strong blender like the Vitamix into a fine flour.
