Ingredients
1st Layer:
1 pint of Vanilla So Delicoius dairy free ice cream
*optional India Tree Sprinkles
2nd Layer:
1 ripe avocado
1 frozen banana
½ cup soaked cashews
¼ cup cacao powder
3 tbsp. raw honey
1tsp vanilla extract
optional:
1 tsp maple extract
¼ cup chocolate chips
stevia
3rd Layer:
8 large strawberries
2 frozen bananas
½ cup soaked cashews
2 tbsp. raw honey
1 tsp vanilla extract
dash stevia to taste
popsicle sticks
Instructions
Let the So Delicious ice cream thaw out for 15-20 min.
Line a loaf pan with wax paper and push down corners leaving it over edge.
Scoop and spread the vanilla 1st layer into pan by pressing down & place in freezer.
In a food processor or blender puree all 2nd layer ingredients except chips.
Taste and mix additional stevia if needed and stir in chips.
Spread chocolate over vanilla with a rubber spatula carefully. Place back in freezer.
In a food processor or blender puree all the strawberry 3rd layer ingredients.
Take pan out of freezer, gingerly spread strawberry layer. Place popsicle sticks firmly.
Cover with plastic and freeze for 4 hours or over night is best.
Using the edges of the waxed paper, lift the ice cream from pan.
Cut accordingly to the number of popsicle sticks.
Press each pop's bottom in a shallow bowl of sprinkles and enjoy or freeze for later.
Notes
If time is of the essence you can most certainly buy all 3 layers of ice cream; although my version is low sugar and is packed with nutrients. Soaking the cashews will help give the layers a creamy texture and flavor. You can soak them for an hour at the very least but 4 is best. You can use a small brownie 8x8 pan too but keep in mind they won't be as thick. However, I liked having more of a bite size treat on a stick too!
