OREO Truffles {heathified version gluten free}

  • 1 10 oz. package of Gluten Free Oreo Cookies
  • 1 8 oz. cream cheese
  • ½ cup hempseeds
  • ¼ cup ground flax
  • ⅛ tsp stevia
  • ¾ cup melted chocolate chips
  • *Lily's stevia sweetened chocolate chips
  • 1 tsp coconut oil
  • optional:
  • 4 drops of peppermint oil or ½ tsp extract
  • 4 crushed candy canes
  1. Let your cream cheese sit out to room temperature.
  2. In a food processor or blender grind up cookies into flour like texture.
  3. Add ground flax and hempseeds and pulse until blended well.
  4. Add and blend cream cheese. Taste and add stevia if you need it sweeter.
  5. Put mixture in the freezer while you melt chocolate chips.
  6. Add 1 tsp of coconut oil to chips before melting on low heat or in a double boiler.
  7. Mix chocolate until it is melted creamy and add peppermint if you like at this point.
  8. Take the oreo mixture out of the freezer and roll into desired size balls.
  9. Using a skewer in the ball helps to keep the mess at a minimum when dipping into chocolate.
  10. Allow each ball to drip a bit after your dunk it. Sprinkle crushed candy canes at this point.
  11. Place chocolate balls on a cookie sheet with wax paper and freeze up to ½ hr. or until needed.
  12. You can store them in the freezer in an airtight container for weeks or the fridge a few days.
Most gluten-free oreo-like cookies are 10 ounces which is shy about 4 ounces of the original Oreo. Since the cleaner "imposter" brands have about 21 cookies verses the 48 traditional cookies this gives me wiggle room to add some nutritionally sound ingredients! To keep these lower in sugar using Lily's stevia sweetened chocolate chips is best. When melting the chocolate to dip the balls in I found it helpful to add a teaspoon of coconut oil as the cleaner chips don't use all the icky oils and easily dries and burns. Heat it on low and stir frequently. Using a skewer I helpful but fingers are fun too when dipping balls. I love adding the festive peppermint twist to this recipe but it is not necessary. Please use organic ingredients when you can.
