In a 1-2 cup size glass jar fill with raw almonds and cover completely with filtered water.
You can soak just the ¼ cup almonds needed for this recipe or more.
Just make sure your glass jar has room for the almonds to expand.
Any size jar you use fill with almonds ¾ full and completely fill to top with filtered water.
Soak almonds up to 3 hours but over night is best. Rinse nuts and refill with fresh water.
In a strong blender mix all ingredients, including soaked almonds and puree until creamy.
Taste and add more spice, pepper or salt.
Notes
You can use any other soaked nut like cashew or walnuts. I put the link in my post for more details on why and how to soak nuts. Or if nuts are an issue you can replace it with hemp seeds, or soaked pumpkin seeds. I have even used ¼ cup of coconut butter! Adding soaked nuts {or coconut butter} lends a creamy texture and flavor to the dressings all the while being dairy-free. For a little sweetness with the spice add the honey! The spices give you the flavor and the lemon replaces that bite we love from vinegar. Read my post why we stay away from vinegar. Please use organic when you can.
