If adding stevia instead of coconut sugar be sure to toss pecan mixture well and set aside.
Core and slice apples thin and toss in juice of lemon or orange in a separate bowl.
Add the other half 2 tsp. ground cinnamon and ¼ tsp. nutmeg and toss with apples.
Spread apples in a baking dish and give an extra dash of cinnamon over the top.
Top the apples with pecan crumble and bake at 350 for 25 minutes.
Notes
If you are doing the FreeDiet or a candida cleanse avoid the coconut sugar and orange. Use the lemon so the apples don't turn brown and the stevia will sweeten it nicely. You can use other nuts for topping but I found pecans go great with apples and when baked they have a sweet, nutty flavor. This recipe will stay in the refrigerator for a few days...if it lasts. It is my daughter's favorite and even eats it for breakfast because it is that healthy. We usually add more nuts and whip cream or for a dairy-free topping like the delicious Coco-Whip! It even tastes great with plain yogurt sweetened with stevia. Please use organic when you can.
