Bacon Wrapped Scallops (paleo, dairy & gluten free}

Serves: 2-3
  • 12 large scallops
  • 1 package nitrate free bacon
  • 1 lemon's juice
  • pink Himalayan sea salt
  • paprika
  • pepper
  1. Cook Bacon until it is 50% cooked. So that it is still bendable.
  2. In a bowl add scallops and toss lemon juice, salt and spices.
  3. When bacon is done and cooled wrap each scallop in bacon strip.
  4. Drain the oil out of the baking dish you cooked the bacon and cook scallops.
  5. Bake for 20 minutes at 350 degrees.
The key to bacon wrapped anything is partially cooking the bacon and then wrapping it and cooking the chicken or fish etc. So don't skip this step unless you want soggy bacon. You can use little scallops and cut the bacon strips in half to get more on the plate. Or do as I did and buy two packs of bacon and double scallops to make it a dinner! This would make a really nice appetizer and will be the hit of the party {its the bacon}! Please buy wild caught scallops and use organic ingredients when you can.
