Coconut Fish Croquettes {paleo, dairy, egg & gluten free}

Ingredients
  • 2- 6 oz. canned skinless & boneless wild fish
  • ½ c. frozen kale or spinach
  • ½ c. shredded coconut
  • ¼ c. diced red pepper
  • 2 tbsp coconut oil
  • juice of 1 lime
  • 3 tbsp. ground flax
  • 5 tbsp. tepid water
  • ½ tsp. pink Himalayan sea salt
  • handful fresh chives
  • few dashes pepper
  • For Broccoli Slaw:
  • 1 bag slaw blend {I used Trader Joe's 16 oz.}
  • ½ c. dairy-free ranch dressing
  • or other dressing
  • Ingredients for Dairy-Free Ranch:
  • ½ cup soaked cashews
  • ½ cup olive oil
  • ½ cup almond milk
  • Juice of 1 lemon
  • 2 tbsp. coconut manna
  • ½ tsp. sea salt
  • ½ tsp. dill
  • ⅛ tsp. garlic powder
  • few dash ground pepper
  • dash of paprika

Instructions
  1. In a small bowl add the ground flax and tepid water. Set aside.
  2. Chop kale or spinach, chives, red pepper and add into a large bowl.
  3. In same large bowl add the rest of the ingredients for croquettes.
  4. Add flax and blend. Form small or medium patties.
  5. Bake in a 350 degree oven for 15 min. and then broil for 5 min. until golden.
  6. While the croquettes are baking make the diary-free ranch dressing.
  7. Add ½ cup dressing to bag of washed pre-cut slaw.
  8. When croquettes are done top them with 2-3 heaping tbsp.
Notes
The flax and water component to this recipe serves as the egg but you certainly could use 1 egg in it's place. If you are using a store bought Ranch Dressing for the slaw please be conscience about the ingredients. Most store bought dressings use poor quality oils and ingredients. My homemade Ranch is simple and tastes delicious. You will have some slaw left over depending on the bag size your purchase 14-16 oz. and it tastes great alone or on chicken or fish. If you like spice add a little cayenne pepper or red pepper flakes to either the slaw or fish croquettes. Making smaller croquettes is great to serve as an appetizer too. Please use organic when you can.
