Cauliflower Fried Rice

Ingredients
  • 1 10-12 oz. frozen bag riced cauliflower
  • or 1 head cauliflower riced
  • 4 large scallions shoots
  • ½ tsp. pink Himalayan sea salt
  • 3 tsp. dried onion flakes
  • *I like Simply Organic Spices
  • 3 tbsp. avocado oil
Instructions
  1. Chop green onion shoots.
  2. In a large bowl add riced cauliflower, scallions and spices.
  3. In a large frying pan add oil and heat to low-medium.
  4. When pan sizzles when drop of water hits pan add cauliflower rice to pan.
  5. cover and cook for 5-8 minutes until golden brown.
  6. With a large spatula flip rice so other side can brown slightly and cook 5-8 min.
  7. Serve warm or store in fridge to reheat.
Notes
Most markets carry frozen riced cauliflower but you can make your own by chopping it into chunks and pulsing it in a food processor. I often make double a batch for leftovers. Also, if eggs are not a problem for you adding one to this recipe gives it that authentic Fried Rice flare! Just crack it in the middle of your pan with the riced cauliflower and stir. You can use another safe high heat temperature oil like coconut for a sweeter flavor. Please use organic when you can.
