Steak Fajitas {paleo, diary & gluten free}

Ingredients
  • 1½ lbs. beef sirloin flap
  • 8 grain free wraps
  • 1 tbsp. coconut oil
  • 2 small onions
  • 3 red bell peppers or for FreeDietâ„¢ phase 1 use julienned zucchini
  • ½ tsp. pink Himalayan sea salt
  • handful of chives
  • Guacamole
  • Marinade:
  • 2 limes
  • 6 garlic cloves
  • 1 tsp. ground cumin
  • ½ tsp. pink Himalayan sea salt
Instructions
  1. In a large bowl squeeze two lime's juice, add cumin, salt.
  2. Chop garlic cloves into fine pieces and cut sirloin flap into long thinner chunks.
  3. Put meat and garlic in the large glass bowl with lime juice and spices.
  4. Let this marinate for as long as you can.
  5. Chop the onions, peppers and sauté them with coconut oil.
  6. Heat up the wraps and spread guacamole and add few strips of steak and vegetables.
  7. Careful not to over fill your wrap. Fold bottom up first and then sides.
Notes
If you are on the FreeDiet phase 1 there is a Thrive brand that makes coconut wraps {turmeric flavor or plain} that are super clean. Although, the Siete brand that I love has very few ingredients the apple cider vinegar is a food to avoid while on the FreeDiet phase 1. You can omit the red peppers and substitute julienne zucchini or another FreeDiet approved vegetable. Also, if dairy is not a problem sour cream is a treat to top these healthy fajitas off with! For my vegan option {which my dad loves} skip the meat and ad julienne zucchini. Please use organic and grass-fed beef when possible.
