Ingredients
  • Filling:
  • 2½ cups soaked cashews
  • ¾ cup strong brewed chai tea cooled, or water w a pinch cloves, cardamom
  • 2 scoops Paleo Vanilla Protein
  • 2 tbsp. coconut oil melted
  • 1 tbsp. gelatin or 1 packet
  • 2 tsp. vanilla extract
  • 2 tsp. stevia or monk fruit
  • 1½ tbsp. ground cinnamon
  • Crust:
  • 2 cups raw or soaked pecans
  • ¼ tsp. pink Himalayan sea salt
  • 1 tsp. vanilla extract
  • 2 tbsp. coconut oil
  • ¼ cup ground flax seed
  • 3 tbsp. water
  • ⅛th tsp. stevia or monk fruit
  • *1 tsp. maple extract optional
Instructions
  1. To make the crust, preheat oven 325 degrees.
  2. Rinse off the pecans. In a large bowl mix oil, and toss in the pecans.
  3. Toss with ¼ tsp. salt, maple extract (if using) and bake nuts for 25 minutes at 325.
  4. To make the filling, in a blender cream, the soaked nuts with remaining ingredients and set aside.
  5. * If using water instead of tea pour in a blender and add *extra spices.
  6. After pecans are baked, in a food processor or strong blender, pulse the nuts into a rough flour.
  7. Add ground flaxseeds and dash salt pulse again.
  8. In an 11 x 9 (or so) glass dish, press the nut crust firmly.
  9. Add a few dashes salt across the crust. Let crust cool.
  10. Pour creamy filling over the crust. Dust cinnamon over the top.
  11. Chill for up to an hour. These bars can be cut and frozen too.
Notes
Firmly pressing the crust into the dish will assure bars hold together. If you notice after pulsing crust ingredients that it doesn't stick together when you press it between your fingers, you can always add another tbsp. or two of water. This will help the flaxseeds to bind with other ingredients and create a firm crust. Please use organic ingredients when you can.
