- 2 cups watermelon chunks
- 2 cups cold coconut water
- thumb (small) size chunk ginger
- 10-15 mint leaves
Watermelon and Summer go hand in hand like boyfriend and girlfriend! So this drink is a toast to Summer and all the foods, activities and fun she brings!
This might surprise you, but watermelon seeds provide an excellent source of nutrients that also go hand in hand with summer activities!
Those annoying seeds don’t have to be pesky any longer because they have some great vitamins and minerals like manganese, magnesium, zinc, iron, and many amino acids that help the body attain optimal health.
Between the coconut water and the ginger {my special ingredient}, this drink is amazing to help replenish the body after being outdoors or exercising.

Watermelon Ginger Juice {no refined sugar

- 2 cups watermelon chunks {seeds too}
- 2 cups cold coconut water
- thumb (small) size chunk ginger
- 10-15 mint leaves
- Wash mint leaves and ginger {you can leave skin on if it's organic}.
- In a strong blender or Vitamix, blend all ingredients except mint.
- After everything is blended, add mint leaves and blend until you still see small pieces.
- If you don't want to see the mint, blend on high speed till it disappears.
- Serve over ice.
