• 1 cup olive oil

  • 3 lemons juiced {about 2/3 c.}
  • 1 1/2 tsp. pink Himalayan sea salt
  • 1/2 tsp. onion powder
  • few extra dashes
  • optional:
  • 3 steamed garlic cloves

Over the years, I have come to understand the difference between one who eats more fish, greens, and vegetables (all the nutrient dense foods) verses one who does not.  In general, those that do not partake in these foods often bellyache about how boring or tasteless they are.

I know this because I was one of those fretting people over healthy foods being boring; maybe you can commiserate with me. If you can’t, well then aren’t you special and sorry I don’t have an award for you (smh).  However, you may still want to pay attention because my life long problem has been solved and you never know, you might have a picky kid or husband that NEEDS my dressing recipe!!

This post is super simple in many ways, it is easy to make this recipe and I don’t have a LOT to say about this dressing other than the obvious…it’s cleaner, therefore healthier. It is taster, therefore you eat better. It is so easy to make, therefore you can make it in a jiffy!

My dream for a long time has been to bottle these paleo and candida friendly, low sugar, nutrient dense, vinegar free, gluten-free dressings, and finally I am working on just that my friends!  It dawned on me that I love seeing dreams come true for all my colleagues, friends and even strangers…so I pondered maybe just maybe I could accomplish just that for myself!

I actually got a little inspiration and guidance from my friend over at Nikki’s Coconut Butters! Nikki has a great story and has worked hard to share her innovative and delicious, paleo friendly, gluten-free, spread made from organic coconut!  Can you resist the thought of eating something called Vanilla Cake Batter or Honey Pecan Pie??!! I rest my cake case!!

Not only is Nikki the co-creator with her husband, Andrew, of these delicious nut butters but she is such a visionary not just with her successful 5 year old company! The whole time we were conversing I kept thinking how mindful she was of drawing out my hopes and vision for these dressings.

She asked me the right questions to provoke such helpful guidance and also allowed me to hear her story and learn from it tremendously! Tom and I both have always deemed schooling from the experts in business, health or even online gurus very essential to making a difference!  I recognized Nikki’s gift of coaching pronto due to this exposure of working with some really passionate people in the industry over the years.

I was burning inside to tell her about her gift but guess what, she was and has been burning to share her passion too and help new entrepreneurs succeed!  Turns out she has launched her coaching/consulting business and the doors or portals are presently open!

Wish I could claim my inclination of her gifts spurred her on but man is she good. I used some of my Zesty Lemon Dressing over this pre-cut organic cabbage salad! The sky is the limit; drizzle some on your favorite fish or vegetables and see how you start to crave fish and eat more greens!!

Zesty Lemon Dressing

  • 1 cup olive oil
  • 1 cup soaked cashews
  • 3 lemons juiced {about ⅔ c.}
  • 1½ tsp. pink Himalayan sea salt
  • ½ tsp. onion powder
  • few extra dashes
  • optional:
  • 3 steamed garlic cloves

  1. Soak washed cashews in a glass jar filled with filtered water to cover nuts.
  2. Soak up to at least an hour but overnight is best either on counter or in fridge.
  3. Rinse nuts well before you add them to make dressing.
  4. Juice your lemons; you should have about ⅔ cup or so.
  5. Add soaked nuts, lemon juice, oil and spices to a strong blender until all is creamy.
  6. Serve over fish or dip cut vegetables into the dressing.

If you are adding the garlic steam it gently in a sauce pan. I prefer cooked garlic as adding it raw is overpowering. This dressing is the base of many of my dressings so have fun and add a little spice or other herbs like chives! If you find your dressing is to thick add a tad more water or if it is too thin add a few extra nuts. Honestly, you can not go wrong here. I have troubleshooted this recipe with large lemons and it was tart so I added more water.You can use grape seed or avocado oil if you do not like the flavor of olive oil. Or you can even use a blend of them to equal a cup of oil. Please use organic when you can and always use cold pressed extra virgin oils. This dressing will stay fresh for up to a week in the refrigerator if you don’t eat it all first!
