vegan lemon dressing

  • 1 cup soaked cashews
  • 3 lemons juiced {about 2/3 c.}
  • 1 1/2 tsp. pink Himalayan sea salt
  • 1/2 tsp. onion powder
  • few extra dashes
  • optional:
  • 3 steamed garlic cloves

Over the years, I have come to understand the difference between one who eats more fish, greens, and vegetables (all the nutrient dense foods) verses one who does not.  In general, those that do not partake in these foods often bellyache about how boring or tasteless they are.

I know this because I was one of those fretting people over healthy foods being boring; maybe you can commiserate with me. If you can’t, well then aren’t you special and sorry I don’t have an award for you (smh).  However, you may still want to pay attention because my life long problem has been solved and you never know, you might have a picky kid or husband that NEEDS my dressing recipe!!

This post is super simple in many ways, it is easy to make this recipe and I don’t have a LOT to say about this dressing other than the obvious…it’s cleaner, therefore healthier. It is taster, therefore you eat better. It is so easy to make, therefore you can make it in a jiffy!

My dream for a long time has been to bottle these paleo and candida friendly, low sugar, nutrient dense, vinegar free, gluten-free dressings, and finally I am working on just that my friends!  It dawned on me that I love seeing dreams come true for all my colleagues, friends and even strangers…so I pondered maybe just maybe I could accomplish just that for myself!

I actually got a little inspiration and guidance from my friend over at Nikki’s Coconut Butters! Nikki has a great story and has worked hard to share her innovative and delicious, paleo friendly, gluten-free, spread made from organic coconut!  Can you resist the thought of eating something called Vanilla Cake Batter or Honey Pecan Pie??!! I rest my cake case!!

Not only is Nikki the co-creator with her husband, Andrew, of these delicious nut butters but she is such a visionary not just with her successful 5 year old company! The whole time we were conversing I kept thinking how mindful she was of drawing out my hopes and vision for these dressings.

She asked me the right questions to provoke such helpful guidance and also allowed me to hear her story and learn from it tremendously! Tom and I both have always deemed schooling from the experts in business, health or even online gurus very essential to making a difference!  I recognized Nikki’s gift of coaching pronto due to this exposure of working with some really passionate people in the industry over the years.

I was burning inside to tell her about her gift but guess what, she was and has been burning to share her passion too and help new entrepreneurs succeed!  Turns out she has launched her coaching/consulting business and the doors or portals are presently open!

Wish I could claim my inclination of her gifts spurred her on but man is she good. Without further-a-do here is Nikki’s contacts to connect with her, Nikki@nikkiscoconutbutter.com and her number 954-805-08405. The detailed information was priceless that she shared with me and if you have a little burning joy in you to start up an endeavor or create a space of your special brand you now know who to call. I felt pressed to share this because like me, our ideas can be a little wonky getting them straight in our heads and it is key to learn from others!  Thank you my expert friend, Nikki!!

I hope you enjoy my Zesty Lemon Dressing that is super simple, paleo, vegan, vinegar free and candida-free friendly!  Check out some of my archived dressings too if you are feeling a little creative or bored with the flavors of eating healthy…. Zesty Lemon Dressing

Prep time
Total time

Author:
Ingredients
  • 1 cup olive oil
  • 1 cup soaked cashews
  • 3 lemons juiced {about ⅔ c.}
  • 1½ tsp. pink Himalayan sea salt
  • ½ tsp. onion powder
  • few extra dashes
  • optional:
  • 3 steamed garlic cloves
Instructions
  1. Soak washed cashews in a glass jar filled with filtered water to cover nuts.
  2. Soak up to at least an hour but overnight is best either on counter or in fridge.
  3. Rinse nuts well before you add them to make dressing.
  4. Juice your lemons; you should have about ⅔ cup or so.
  5. Add soaked nuts, lemon juice, oil and spices to a strong blender until all is creamy.
  6. Serve over fish or dip cut vegetables into the dressing.
Notes
If you are adding the garlic steam it gently in a sauce pan. I prefer cooked garlic as adding it raw is overpowering. This dressing is the base of many of my dressings so have fun and add a little spice or other herbs like chives! If you find your dressing is to thick add a tad more water or if it is too thin add a few extra nuts. Honestly, you can not go wrong here. I have troubleshooted this recipe with large lemons and it was tart so I added more water. You can use grape seed or avocado oil if you do not like the flavor of olive oil. Or you can even use a blend of them to equal a cup of oil. Please use organic when you can and always use cold pressed extra virgin oils. This dressing will stay fresh for up to a week in the refrigerator if you don't eat it all first!

IJust a comment about your web presentations (nothing to do with the actual recipes which I love). It seems that the current trend is to use grey color for the copy on web pages, but it is very difficult to read and even worse to print. I am trying to print your recipes on my black/white laser printer, and it is impossible to get the copy dark enough to make a good copy. Would it be too much to ask that your web designer use a very dark gray if they don’t want to use black.

Faith, thank you so much for your suggestion! Honestly, SOH has taken a back seat in some regard due to very exciting things in the works! A book! You remind me that this is an important task I need to get done! Thank you so much for reaching out.

I just found your page yesterday and made this dressing today. It is so good. When my husband saw the cashews soaking, he couldn’t understand how a dressing was going to be made from them. I have used cashews for other sauces and things, but I was probably the only one eating them. He doesn’t always like my healthy off the beaten track foods, but he liked this.

Hi Cathy, this is music to my ears! I am so happy your husband liked it but especially that you have been using soaked cashews for other recipes! Isn’t it amazing how soaking nuts can give such a creamy texture! You might like my creamy lime bars too Creamy Lime Bars (Raw, Dairy & Gluten Free) . Welcome to Spoonful of Health and so thrilled you found our page! Please let me know how I can serve you or help trouble shoot any recipes!

What do you soak the cashews in? I’m making this.

Hi Courtney, you would soak cashews or any other nuts in filtered water. Enjoy!

How do you think walnuts (or other nuts) would be in place of
    Cashews in this recipe?

Hi Shannon, I have made this with soaked walnuts and soaked almonds. I prefer taste of cashews or almonds but making sure you soak walnuts longer I believe reduces the bitterness from the tannins. Enjoy!
