Here is another version of my Easter Rice Crispy treats! I just love that I don’t have to turn on the oven or dirty a pan to make these treats, however, you will get your hands dirty of gooey yumminess!
So ask the kids to help and see who licks their fingers faster! I was scolded by my daughter as she said, “No fair you have a bigger tongue than me!” She does have a point and I was not complaining!
Nutty Chocolate Rice Crispy Treat {nut free option, gluten, refined sugar & dairy free}

- 1½ cup brown rice cereal
- ½ cup sun butter or almond
- 3 tbsp. maple syrup or coconut nectar
- 2 tbsp. coconut oil
- 2 tbsp. chia seeds
- 1 tsp vanilla extract
- ¼ cup chocolate chips {Lily's stevia chips}
- In a big bowl add brown rice cereal and set aside.
- In a small bowl blend your nut/seed butter, oil, maple syrup, chia, and extract.
- Using your hands blend it in with the rice cereal.
- Layer a cookie sheet with wax paper.
- With wet hands spread and press crispy treat into a square at least ½ inch thick.
- Melt chocolate chips and drizzle across the top and refrigerate for up to an hour.
- With a pizza cutter you can cut into squares.
If you can get your hands on One Degree Organic Sprouted Rice Cereal this treat just got 100x better for you! I have made these with the plain rice and cocao flavor which adds extra sweetness. Also, switching up vanilla to almond extract is tasty with the almond butter. I love using coconut nectar instead of maple syrup it works great and is lower on the glycemic scale than maple syrup or honey. Using sun butter will give you a nut free treat but feel free to use any of your favorite nut butters. Please use organic where you can.
