  • 1 frozen banana
  • 1/4 tsp of orange extract
  • 1 scoop of vanilla/plain protein powder
  • dash stevia {optional}

Whatever happened to the ice cream trucks?  I fondly remember the corny carnival music that truck would make while driving through our neighborhood as kids. Not to mention, the driver was this cute old man who couldn’t move fast enough to hand out the treats.

My brother and I would run so fast in the house to get the extra change my dad would toss in the coin jar so we could share in this summertime ritual with all the kids.  It was like happy hour for the youngsters.  Kids would come running from everywhere waving and screaming, “The ice cream truck, the ice cream truck!”

Do I dare admit I would lap up that sugary, frozen red dye to get to the bottom for the gumball or chomp on the Nutty Buddy until it dripped out the bottom of the cone?!  Yes, I did just that and with glee ; with a sugar high I am sure!

My favorite of all those colorful rainbow frozen treats was the Orange Pushup Creamsicle!  I think I liked that one for its creamy fruit flavor {never mind that it was artificial; we have a happy ending now} and because no matter how long I took to eat that creamsicle, I wouldn’t loose a drop due to that clever push up concept!

Anyway, here is my happy ending……I had a wistful desire to return to that nostalgic time and viola, a “healthified” Orange Pushup Creamsicle!  I loved the no drippy mess with the push up popsicle but I had these cute orange cups in mind to make it grown-up friendly!  You can thank me later after you eat yours {wink wink}.

For old time’s sake….. “The ice cream truck, the Ice cream truck” {running to the freezer now}!!

Orange Creamsicle Cups {dairy, refined sugar & gluten free}

Ingredients
  • Juice of 3-4 oranges {need 1 cup juice}
  • 1 frozen banana
  • ¼ tsp of orange extract
  • 1 scoop of vanilla/plain protein powder
  • dash stevia {optional}
Instructions
  1. Squeeze oranges for 1 cup of juice and add it to a strong blender or Vita mix.
  2. Set aside orange halves.
  3. Add frozen banana and extract. Blend till creamy.
  4. Blend in protein powder last.
  5. Taste mixture and add stevia to taste if your protein powder is not sweetened.
  6. Fill orange halves with mixture and freeze overnight or at least 4 hours.
  7. When ready to serve, top with whip cream or coconut cream and add a tangerine slice.
Notes
Depending on orange size you may need to use 4 to get 1 cup of juice. If you have extra mixture left over you can freeze them as popsicles or drink as a smoothie. Using a plain or vanilla protein powder is best without added sugars other than stevia. Either a whey or pea protein works fine in this recipe. Please use organic ingredients when you can.
