My props for today’s post reminded me of the innocent games of childish nature that we chanted. “He loves me, he loves me not, he loves me, he loves me not, he loves me.”
As I plucked the petal from it’s life, I was intoxicated by its smell that reminded me of petals picked with endearing hope he loved me.
Today’s post is in the name of LOVE! Whether it is love of chocolate or love for your soul mate…this one is for you.
No explanation on the health benefits of the ingredients I used in this recipe {well by now you know what I make is good for you}. I just wanted to share the love…Happy Valentine’s Day my friend!

Peppermint Fudge {paleo, nut, refined sugar, dairy & gluten free}
- ¼ cup cocao powder
- 2 tbsp. coconut flour
- 6 tbsp. coconut oil
- 4 tbsp. ghee {clarified butter}
- ½ cup full fat coconut milk
- 2 tbsp coconut butter/manna
- 4 tbsp. coconut palm sugar or date sugar
- 1 tsp vanilla
- 4 drops of do terra peppermint essential oil
- or 1 tsp of peppermint extract
- up to ⅛ tsp stevia
- In a small saucepan on medium heat whisk the cacao, oil, and ghee.
- Add coconut milk, coconut manna and sugar till blended.
- Add 1 tbsp. at a time of the coconut flour till it is smooth and thickens.
- Allow liquid to almost come to a simmer and turn off heat.
- Stir in extracts and taste if you would like it sweeter add up to ⅛ tsp stevia.
- Line a meatloaf pan or small dish of your desire with wax paper and poor in fudge liquid.
- Freeze for the first hour and than transfer to the refrigerator.
I prefer using do terra peppermint essential oil because of it's health properties and potency but if you only have extract from the market that will work. Remember not all essential oil brands are safe to ingest. If you do not like stevia you could add 1 extra tablespoon of coconut sugar but you will need to add a tad more coconut milk. Please use organic ingredients when you can.
