I am not a boozing kind of girl but I do enjoy a fun cocktail or mocktail {these days} for a celebration or in this case BACK TO SCHOOL time. Actually, I am sad to see summer go but happy to get back on my game! I would like to make a toast to all the moms who need three cheers and a bottle of beer.. I mean Sparkling Water!
I should back up to my first claim because I bet some of my girlfriends reading this are snickering………well, truth be told I was a light weight in the cocktail arena but I could have fun no matter what, as long as I didn’t cross the forbidden two cocktails. Several times I remember the room twirling and my silly self pirouetting into a twisted mess. I was not graceful intoxicated, if my description lead you to believe such a thing! Whew, I am happy to be a grown up girl; we sure did stupid things as teenagers or rather “of age kids”.
In this post I wanted to introduce to you a unique beverage company that I found at the Miami food blogger conference! Cascade Ice has some fun sparkling waters that are organic, no calories {for my counting friends}, no sweeteners or sodium! I wanted to create some libations that even my pregnant friends or those who don’t drink alcohol could salute at any celebration and not feel left out!

The Tropical Fizz I created with creamy coconut ice cream floating on top should actually make you feel pretty special without the need for the libations part! The only peer pressure you should feel is the need to put your feet up as you swing in the hammock, sipping on this fizzy fun! Besides, you deserve it after the kind of engaged summer you have had.
So if you do add the rum or vodka, at least the mix part is actually healthy for you. That is a pretty good deal to have a “healthified” cocktail………but don’t get wild on me and take more than your share! If you do, take some selfies and share them on Facebook! Tropical Fizz with Creamy Coconut Ice cream
- 3 orange's juice
- 8 oz pineapple juice
- pinch of nutmeg
- 1 tsp of goji or acia powder {optional}
- 1 bottle 17.2 OZ Cascade Sparkling Citrus Water
- 1 scoop of coconut ice cream {recipe below}
- 3-4 oz of rum {optional}
- To Make Ice Cream:
- 3 cups fresh pineapple
- 2 cups filtered water
- 2 cans coconut milk full cream
- 15 dried pitted dates
- 2 tbsp. raw honey {optional}
- 1 whole vanilla bean
- 1 tsp coconut extract
- *Or you can buy Tropical Sorbet
- Shake well or in a Vita mix- blend juices, nutmeg, goji / acai powder gently.
- Pour equal juice blend and citrus sparkling water in a tall glass leaving room to add rum and scoop of coconut ice cream. Sprinkle a dash more of nutmeg on top.
- To Make Ice Cream:
- In Vita mix, add all of the ingredients and blend well until dates and vanilla bean are pureed well.
- You can enjoy the soft serve ice cream right from the vita mix or follow your ice cream maker directions for a firmer ice cream.
- Of course you can use a store bought tropical flavor.
When making the ice cream and blending in the Vita mix be careful to make sure all of the pits are out of the dates. If you missed one you can strain the liquid from the ice cream thruugh a strainer {I missed a pit}. You can buy a store bought tropical sorbet for this recipe if time is of the essence.

Berry Frescas
- 1 pint of blackberries
- 15 large mint leaves
- 3 tbsp honey or stevia to taste
- ½ of a lemon's juice
- ½ of a lime's juice
- 1 bottle {17.2 OZ} mixed berry Cascade Sparkling water
- ¼ cup rum or vodka
- 6-8 ice cubes
- Wash berries and mint leaves.
- Muddle blackberries, mint leaves, honey/stevia, lemon and lime juice in a bowl.
- If you are making double the recipe, put ingredients into the food processor and pulse gently.
- Add Cascade Sparkling water, ice, alcohol if desired and stir.
