  • 1/4 cup soaked cashews
  • 8-10 strawberries
  • 2 limes juiced
  • 12 fresh mint leaves
  • 1/4 cup olive oil
  • 1 tbsp. honey
  • 1/2 tsp Himalayan sea salt

Want to know why this recipe had my husband blindfolded?  It did involve strawberries…….. and salad.   Sorry to say, no chocolate or romance but if I have still piqued your interest, keep reading! The strawberries have been so delectably sweet lately and are perfect for summer recipes!

Out of necessity, I had to come up with some recipes using them because I bought so many on sale!  Not to mention, I am of like mind, that salad is all about the dressing.  So here we have this tart, yet sweet strawberry drizzle of creamy goodness!!

Oh, I should mention my daughter was blindfolded too because I had also made my Mango Mint Dressing and she remarked that the Strawberry Dressing tasted like the mango.  Not quite what I was going for.  So a bit of tweaking and squeezing of a lime or two, we came to the finished product.  This dressing does have it’s own personal flavor.  The taste testers were blindfolded to make sure they could taste the difference.

Strawberry Mint & Lime Dressing {raw, vinegar & gluten free}

Ingredients
  • ¼ cup soaked cashews
  • 8-10 strawberries
  • 2 limes juiced
  • ¼ cup olive oil
  • 1 tbsp. honey
  • ½ tsp Himalayan sea salt
  • 12 mint leaves or so
Instructions
  1. Wash strawberries, limes, and mint.
  2. Blend all ingredients into a strong blender or Vitamix except mint.
  3. When ingredients are creamy add mint and pulse just enough to see flecks of mint still.
Notes
If you don't have soaked cashews you can use raw washed. Soaked add more creaminess to the dressing. This recipe will last up to a week in the refrigerator. If your strawberries are not sweet you can always add an extra bit of raw honey. If you are following a strict candida diet you should omit the honey. Please use organics where you can.
