  • 4 cups of boiling water
  • 3-4 garlic cloves
  • 1 red pepper
  • 2 tomatoes
  • 1/2 zucchini
  • 2 carrots
  • 1 1/2 avocados
  • 1/2 cup hempseeds
  • 1/8 teaspoon cayenne pepper
  • 1 teaspoon sea salt to taste
  • dash of kelp
  • dash of paprika
  • handful of chives
  • handful of cilantro
  • baked corn chips (omit for FreeDiet™ phase 1)

Have you ever had one of those days, where you are too tired to think about what to eat for dinner or let alone have the energy to prepare it?  My solution for this common problem is my Taco Soup, Vitamix style that takes only minutes to prepare!!

Yes, you heard me right, this meal will only take minutes to prepare, and leave you with new found energy!  This soup is so easy and delicious you might just get addicted!

You will need a strong blender like the Vitamix to prepare this fabulous soup.  I often wash the vegetables in the morning, place them in the Vitamix container and leave it in the refrigerator.  Later that day, I can just walk in the door and push the button for a gourmet dinner to appear magically!

What makes this soup a complete meal and satisfying is the addition of hemp seeds.   In the picture below you can see that in addition to the soup, I  cooked some ground buffalo meat and spiced it up with a dash of sea salt, cayenne and ground garlic powder.  I topped the meat with a scoop of grass-fed sour cream over an organic corn tortilla (learn more).

Corn-Tortilla

Ingredients:

4 cups of boiling water
3-4 garlic cloves
1 red pepper
2 tomatoes
1/2 zucchini
2 carrots
1 1/2 avocados
1/2 cup hemp seeds (learn more)
1/8 or less teaspoon cayenne pepper
1 teaspoon sea salt to taste
Dash of kelp (learn more)
Dash of paprika
Handful of chives
Handful of cilantro
Baked corn chips (learn more) (omit for FreeDiet™ phase 1)

Soup

Directions:

1. Boil 4 cups of water with garlic cloves until they are tender.

2. Wash and peel avocado & vegetables, and wash fresh herbs.

3. Fill Vitamix container with all ingredients, EXCEPT water, garlic and corn chips.

4. Pour 3/4 of the boiled water, all the garlic into Vitamix and puree.

Tips: If you want your soup thinner add the rest of the water.  For thicker add the other half of avocado or zucchini. If you are not a fan of spicy, just use a dash or two of cayenne.  In the video, I add ingredients in a different order, however, this lends to the Vitamix’s amazing power to puree everything, no matter what order you put it.  You can enjoy your soup with some baked corn chips on the side or crumpled over top.

I like to stick with Organic vegetables and herbs, wherever possible, so that I don’t puree the pesticides too! If you have any leftovers they will keep in your refrigerator for a few days.

Look who was sneaking around my food pictures. It has become the norm, when I have camera in hand, our dog knows to follow because food will be found!!

It’s a raw soup (minus the garlic) so to benefit nutritionally from this recipe you will want to enjoy it right away.  When enjoying your leftovers, heat it up gently, but enough that it warms it to your taste. I hope that you have a fiesta with your bowl full of health!
